Delicious HEALTHY Blueberry Muffin Recipe

I found this muffin recipe that will be a crowd pleaser this past weekend.  It’s packed full of fiber…loaded with protein…and contains all the nutrients you need to fuel your morning.

And…it tastes amazingly delicious.

So…pop these in the oven, this weekend and you will have a healthy breakfast for the upcoming week:

Healthy, Protein-Packed Blueberry Muffins

Ingredients:

1 whole egg

1 C. egg whites

1 C. natural, no-sugar added applesauce

1 C. quick oats

½ scoop vanilla protein powder

2 to 3 tsp. cinnamon

Directions:

1. Preheat oven to 350 degrees

2. Combine egg, egg whites, applesauce, quick oats, and protein powder in a medium mixing bowl.  Once a thick batter forms, add the cinnamon and combine until smoothed.

3. Scoop batter into prepared muffin tins, or pan sprayed with cooking spray or coated with melted coconut oil.

4. Bake for 25 to 30 minutes or until tops spring back when pressed (oven times may vary, so times may need to be adjusted).

5. Remove from the oven, and while still hot, add ghee (until melted) and add sprinkles of coconut sugar to the top.

6. Serve with a side of fruit and enjoy.

Seriously this is one of the best and healthiest muffin recipes I’ve ever tried.  I am sure you’re going to love it as well.
